Roasted Red Pepper and Feta Dipping Sauce
2 red bell peppers
1 garlic clove, peeled
1/8 cup olive oil
1 cup Fet.a.Ccompli, crumbled
1) Char peppers directly under the broiler or over the flame of a gas stove until all sides are blackened. Close peppers in a paper bag for 10 minutes. Peel, seed and quarter the peppers.
2) In a food processor or blender, puree peppers, garlic, olive oil and feta. Season with salt and pepper. Chill until serving. Serve with crudite and pita chips.
